What to take to eat when hiking, etc. for several days

Hello, I'm a mixed type; 21 Symp, 49 Balanced, 28 Parasymp, 33 Slow, 66 Fast. I'll soon be going ski touring in the Slovak Republic for a week, and I need to carry light weight or dehydrated food. I expect to be able to get a variety of naturally 'cured' sausages- the hard type, similar or harder than salami, which will provide protein and fat, but I may be struggling to get the vegetable part of the diet. Can you think of any foods that I could get that would help me keep an even balance. Thanks

Hello,

Sorry but this one seemed to get lost in the internet for me...in other words I missed it.

Anyway the cured sausage is a good idea and I would recommend some sliced celery and carrots along with some nuts as an easy meal on the go.  I did the same thing on a recent skiing trip and this worked great.
