this is the only way I can eat 2 tsp of organic psyllium powder daily. Because of this recipe, I never miss it. In fact sometimes I have it twice a day! I got the idea from the fact that the food industry uses psyllium powder to thicken ice cream and jams.
Must have: blender that really crushes ice (I have an Oster Beehive...works great)
4 oz ice water
4 oz frozen fruit (blueberries, org. rasberries etc.) or try a fresh fruit of your choice (I've done fresh apple w/cinnamon and nutmeg)
2 packets of stevia (I like Sweetleaf stevia ...loaded with FOS)
Mix in blender until liquid is gone...becomes a very thick blob.
Pour into bowl, sprinkle 2 tsp organic psyllium powder over top and fold with a fork.
