These are so good...I don't think they have any food value because the flax seeds are not sprouted, so our teeth can not break thru the hull. They do have value as fiber and mucelage (sp?) and I love having crunchy, crackers for my new high purine, chicken liver pate or my organic Maranatha chuncky peanut butter :) I have been having this at the end of a meal if I need to add some fat. The chicken liver pate is so full of fat (organic raw butter etc.)
(These do NOT work out well in an oven on low...the dehydrator really makes this an awesome end product; I picked up my excalabur 4 tray dehydrator for $25.00 at a thrift store. Check craigslist...they are for sale a lot, right next to the used exercise equipment! LOL)
Flax Crackers
4 cups whole flax seeds, soaked 4-6 hours
Soak flax seeds for 4 to 6 hours in purified water. You will then have a gelatinous mixture, be sure to keep moist and loose for spreading. Add celtic sea salt/ or Himilayan salt to taste.
Spread mixture as thin as possible on your dehydrator trays with a teflex sheet on top. (I use unbleached parchment paper...no teflex yuck!) Keep your hands wet as this will help on spreading the flax seeds (or use a spatula) Dehydrate at 105 degees for 5-6 hours and then flip the mixture and remove the teflex sheet. Continue dehydrating until the mixture completely dry. Approximately 5-6 hours. (Mine take about 12 hours on each side to get really crispy).
Break into pieces and put in lg glass jar with tight lid. Put some organic cotton balls in the jar to absorb moisture.

I am so excited to try this. Some things that I miss while on the protein diet is something crunchy. (other than celery :) ) Do you have any other recipes that use a dehydrator?

I need the crunchy and the fiber..so the flax is my favorite. HOWEVER<
there are many other things I make with my dehydrator. Check out the recipes and the forums on living foods for other cracker recipes, http://www.living-foods.com/recipes/ also Dr. Mercola's Total Health has a really good one for High Protein types (not as crunchy but it is so tasty! great recipe)...
What I plan on trying next is to make jerky and pemmican stuff. So I'll be dehydrating chicken, ground buffalo and some red meat...perhaps elk not sure yet.
