I find that dairy is a negative factor for me; my sinuses get clogged and smell. A lot of the suggested meals use dairy. What is a good alternative so that I can still get the benefits you would like me to receive from the dairy.

I would first suggest seeking a quality raw dairy source, www.realmilk.com, since most of the challenges with dairy are due to the lack of enzymes with conventional dairy. If this is still a challenge or you cannot find raw dairy in your area you could try adding a lactase enzyme supplement with dairy or feel free to replace the dairy with any other fat in your meal plan.
