Is anyone willing to share their recipe for raw milk ice cream?
I make raw milk ice cream frequently and use a Cuisinart ice cream maker. My basic ingredients are always 1 cup raw cream, 2 cups raw milk, 1/2 tsp stevia. Then I add flavoring items. Some of my favorites are: Cherry 3/4 cup organic cherries halved, 3/4 cup raw organic pecans, 1/2 cup organic raw chocolate nibs, 1 1/2 tsps almond extract. Lemon 3/4 cup raw organic cashews, 2 tsps lemon extract, 1 tsp organic lemon peel, juice & pulp of 1 organic lemon. Coconut 3/4 cup raw organic walnuts, 3/4 cup organic unsweetened shredded coconut, 2 tsps coconut extract.
I read that adding lecithin granules promotes creaminess but haven't tried that yet. I think I will with my next batch. If you have any other questions, write to me at agoers@jewels.com
