Can someone explain to me the difference between the fat in an egg from a hen that has been feed non gmo organic corn

and the fat in a cow that has been feed non gmo organic corn as well. How is it that the egg in the hen is considered good fat  and unless the cow is pasture

feed the fat in the feedlot is undesirable.  This is probably a naive question but I don't know how the conversion process differs.
